Sweet sultanas shine in this delicious Middle Eastern dessert.
Ingredients:
  • 380g (2 cups) couscous
  • 130g (2/3 cup) sultanas
  • 250ml (1 cup) fresh orange juice
  • 250ml (1 cup) water
  • Pinch of ground cinnamon
  • 1 apple, core removed, coarsely grated
  • Attiki reduced-fat honey yoghurt, to serve
  • Toasted flaked almonds, to serve
Instructions:
  • In a medium bowl, mix the couscous and sultanas. Pour in the orange juice, water, and cinnamon. Stir until fully combined. Cover and let sit for 10 minutes until all the liquid is absorbed. Fluff the couscous with a fork before serving.
  • Combine the apple into the mixture and stir well. Serve the couscous in bowls, topping each with a dollop of yogurt and scattering the toasted almonds over them.
