Ingredients:
  • 450.00 gm self-raising flour
  • 2.50 gm ground cinnamon
  • 90g butter, chilled, chopped
  • 257.50 gm milk
  • 1 small granny smith apple, peeled, grated
  • 85.00 gm sultanas
  • Reduced-fat margarine spread, to serve
Instructions:
  • Preheat your oven to a toasty 220°C (200°C fan-forced) and prepare a large baking tray lined with baking paper.
  • Pulse flour and cinnamon until just combined. Add butter and pulse until mixture resembles fine breadcrumbs. Transfer to a large bowl.
  • Create a crater in the middle of the mixture. Pour in the milk, apple, and sultanas. Use a butter knife to gently mix until just blended. Transfer the dough onto a lightly floured surface. Knead it gently until a cohesive dough forms. Allow it to rest for 5 minutes.
  • Shape the dough into a thick 4cm disc, then cut out rounds using a 6cm cutter. Arrange the rounds closely together on a baking tray. Bake for 25 minutes until golden and scones sound hollow when tapped. Cover with a tea towel and let sit for 5 minutes. Serve warm with margarine.
