Apple strudels

Delight in crispy strudel with apple cinnamon filling.
Ingredients:
  • 1 x 800g can apple, coarsely chopped
  • 90g (1/2 cup) sultanas
  • 12 sheets filo pastry
  • 30g butter, melted, cooled
  • 1 egg, lightly whisked
  • Icing sugar, to dust
  • Ground cinnamon, to dust
  • Vanilla ice-cream, to serve
Instructions:
  • Preheat your oven to 200°C and line 2 baking trays with non-stick baking paper. Mix together the apple and sultanas in a bowl.
  • 1. Lay the filo sheets on a clean work surface and cover with a dry tea towel followed by a damp tea towel to prevent drying out. Brush one filo sheet with butter, layer another sheet on top, and brush with butter. Repeat this process to make a stack of four filo sheets. 2. Cut the filo stack in half crossways. Brush the edges of the filo stacks with egg wash. 3. Spoon one-sixth of the apple mixture along one narrow edge of each filo stack. Fold the edge over the filling, then fold in the sides. Brush the edges with egg wash and roll up firmly to enclose the filling. 4. Place the rolls seam-side down on a lined tray. Repeat the process with the remaining ingredients to make two more batches.
  • Use the remaining egg to brush the filo rolls. Bake in the oven for 12 minutes or until light golden, swapping trays halfway through cooking. Dust with icing sugar and cinnamon and serve with ice-cream.
