Ingredients:
  • 16 sheets filo pastry
  • 60g butter, melted
  • 40.00 ml flaked almonds
  • 20g butter
  • 4 granny smith apples, peeled, cored, thinly sliced
  • 90g sultana
  • 1/4 tsp ground cloves
  • 16.00 gm brown sugar
  • 250g cream cheese, at room temperature
  • 55g caster sugar
  • 1 tsp finely grated lemon rind
  • 70g brown sugar
  • 60ml cream
  • Ice-cream or thick cream, to serve
Instructions:
  • In a sizzling pan, melt butter until fragrant. Toss in apples, sultanas, cinnamon, cloves, and brown sugar. Cook on high heat for 5 minutes until apples are tender. Take off heat and let cool.
  • Preheat oven to 180°C. In a bowl, use an electric mixer to blend cream cheese, caster sugar, and lemon rind until smooth and creamy.
  • Place the filo on a work surface and keep it covered with a damp tea towel to prevent drying out. Line an oven tray with baking paper.
  • 1. Brush a sheet of filo dough with melted butter, then layer another sheet on top. Fold in half. 2. Add one-eighth of the apple and cream cheese mixture on top. 3. Fold in the sides and roll up to enclose the filling. 4. Brush with more melted butter and sprinkle with flaked almonds. 5. Place on a baking tray and repeat the process with the remaining filo sheets, butter, apple mixture, cream cheese mixture, and almonds.
  • Bake for 20 minutes or until beautifully golden and cooked through, then allow to cool slightly before serving.
  • In a saucepan over medium heat, combine sugar, butter, and cream. Stir and cook for 5 minutes until butter melts and sugar dissolves.
  • Plate the strudels and generously drizzle with the sauce, then serve alongside a dollop of cream.
