Indulge in a cozy American treat of spiced apples topped with buttery bread crumbs.
Ingredients:
  • Melted butter, for greasing
  • 600g (about 3) golden delicious or pink lady apples
  • 100g butter
  • 4 pieces sliced white bread
  • 70g (1/2 cup) pecan nuts, chopped
  • 70g (1/3 cup, firmly packed) brown sugar
  • 5.00 gm mixed spice
  • 27.20 gm sultanas
  • 80ml (1/3 cup) apple juice
  • Vanilla ice-cream, to serve
Instructions:
  • Preheat your oven to 180°C. Use the melted butter to generously coat a shallow 2-litre (8-cup) ovenproof dish.
  • Prepare the apples by peeling, quartering, and coring them. Then, cut each quarter in half lengthwise. In a large frying pan over medium heat, melt 60g (3 tablespoons) of butter. Add the prepared apples and cook for 3-4 minutes on each side until tender. Remove from heat and set aside.
  • Pulse bread in food processor until fine crumbs form. Transfer to a bowl and combine with pecans, sugar, and spices, mixing thoroughly.
  • Spread a third of the breadcrumb mixture over the bottom of a greased dish. Layer half of the apples and 1 tablespoon of sultanas on top. Spread half of the remaining breadcrumb mixture over the apples and sultanas. Add the rest of the apples and sultanas on top. Finish by spreading the remaining breadcrumb mixture over everything and drizzling with apple juice. Dot the top with the remaining butter. Cover and bake in a preheated oven for 25 minutes. Uncover and bake for an additional 15 minutes.
  • Transfer the mixture into individual bowls and top each with a scoop of ice cream before serving.
