Budget-friendly and easy Brown Betty dessert using fruit bread, pie apple, and canned peaches for a delicious twist on a classic American favorite.
Ingredients:
  • 6 slices fruit bread, chopped (see Notes)
  • 59.40 gm brown sugar
  • 28.05 gm desiccated coconut
  • 1.25 gm mixed spice
  • 400g can sliced pie apples
  • 410g can sliced peaches, drained
  • 240.00 gm thick vanilla custard
  • 40g butter, finely chopped
  • Icing sugar mixture, for dusting
  • Honey, caramel and macadamia ice-cream, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced and generously grease a 2-litre rectangular roasting dish.
  • Pulse bread in a food processor until coarse breadcrumbs form. Add sugar, coconut, and mixed spice, then process for 10 seconds until well combined.
  • Sprinkle half of the breadcrumbs on the bottom of the dish. Arrange apples and peaches on top. Drizzle spoonfuls of custard over the fruit. Sprinkle the rest of the breadcrumbs and evenly scatter butter on top before baking.
  • Bake for 25-30 minutes until breadcrumbs are golden and crispy. Sprinkle with powdered sugar and serve with ice cream.
