Apple and peach pies

Delicious mini apple and peach pies that are quick and easy to bake.
Ingredients:
  • 1 x 400g can Baker's Choice apple pie fill
  • 1 x 415g can peach slices in syrup, drained
  • 50.00 gm caster sugar
  • Olive oil spray
  • 1 sheet (25 x 25cm) frozen ready-rolled shortcrust pastry, just thawed
  • 1 egg, lightly whisked
  • Double cream, to serve
Instructions:
  • Preheat your oven to a toasty 200°C. Mix together the apple, peach, and 2 tablespoons of sugar in a medium bowl. Give four 185ml (3/4-cup) ramekins or ovenproof dishes a quick spritz of olive oil spray.
  • Evenly distribute the apple mixture into the ramekins.
  • Cut 4 pastry discs using a 9cm-diameter round cutter. Place a disc on each ramekin and seal the edges by gently pressing. Prick the pastry of each pie using a fork, then brush with egg and sprinkle with the remaining sugar.
  • Place the pies on a baking tray and bake until the pastry turns a beautiful golden brown, about 20-25 minutes. Serve piping hot with a dollop of cream.
