Apple and peach pie

Effortlessly create a delicious winter fruit tart with pre-made pastry and canned fruit.
Ingredients:
  • 1 x 800g can apple pie fruit
  • 1 x 410g can baker's diced peaches
  • 60g (1/4 cup) demerara sugar
  • 2 sheets (25 x 25cm) frozen ready-rolled shortcrust pastry, just thawed
  • 1 egg yolk, lightly whisked
  • Thick cream or custard, to serve
Instructions:
  • Preheat your oven to 190°C. In a large bowl, mix together the apple, peach, cinnamon, and 2 tablespoons of sugar for a delightful fruit filling.
  • Place a single sheet of pastry into a 20cm pie dish, trimming any extra. Spread the apple mixture over the pastry base and gently brush the edges with egg yolk for a golden finish.
  • Cover the filling with the second pastry sheet, press the edges firmly with a fork to seal, trim any extra pastry, then prick the top with a fork. Lastly, brush with the remaining egg yolk, and sprinkle with the reserved sugar.
  • Place on a baking tray and bake for 25 minutes. Cover with foil and bake for another 15-20 minutes or until golden brown. Allow to cool for 10 minutes before serving with cream or custard.
