Prep toast the night before for a quick and cozy breakfast. Customize with fruit, yogurt, seeds, or nuts for variety.
Ingredients:
  • flaked almonds
  • 2 pears
  • 800 ml - 1 litre almond milk
  • 100 g oats
  • 100 g millet flakes
  • 100 g barley flakes
  • 100 g quinoa
  • 40 g pumpkin seeds
  • 40 g sesame seeds
  • 1 tablespoon maple syrup plus extra to serve
Instructions:
  • Preheat the oven to 180ºC/gas 4. In a bowl, combine oats, flakes, quinoa, and seeds. Spread the mixture onto a roasting tray and toast in the oven for 20 minutes, shaking every 5 minutes for even toasting. Cool the mixture until golden, then store in a jar for breakfast. When ready to serve, place 1 large handful of the toasted mix per person in a pan with 200ml almond milk. Simmer on low heat for 10 minutes until grains are tender. Alternatively, cook all grains at once with 800ml almond milk, adding the extra 200ml to loosen, if desired. Core and slice the pears then warm with maple syrup in a pan for 5 minutes. Serve the cooked grains topped with warm pear, a drizzle of maple syrup, and flaked almonds.
