Irresistible breakfast casserole with hash browns, bacon, eggs, and cheesy goodness. Ideal for breakfast or brunch!
Ingredients:
  • 1 (1 pound) package bacon, diced
  • 1 sweet onion, chopped
  • 6 eggs, lightly beaten
  • 4 cups frozen Southern-style hash brown potatoes, thawed
  • 2 cups shredded Cheddar cheese
  • 1.5 cups small curd cottage cheese
  • 1.25 cups shredded Swiss cheese
  • 1 cup chopped green bell pepper, or to taste
  • 1 (4 ounce) can chopped green chilies, or to taste
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect temperature.
  • Crisp bacon and sauté onion in a skillet over medium heat for 10-15 minutes. Remove from heat and set aside, keeping the drippings.
  • Prepare the 9x13-inch baking dish by generously greasing it with the flavorful reserved bacon grease.
  • Mix together the cooked bacon, onion, eggs, hash brown potatoes, Cheddar cheese, cottage cheese, Swiss cheese, bell pepper, and green chiles in the baking dish until well combined.
  • Cook until the eggs are completely cooked and set, for around 35 to 40 minutes in the preheated oven.
  • Allow the casserole to cool for 10 minutes before slicing and serving.
