Elevate your brunch with a delicious make-ahead sausage breakfast casserole inspired by Jimmy Dean. Customize it to your liking and enjoy with a cup of coffee!
Ingredients:
  • 1 pound Italian pork sausage
  • 10 large eggs, beaten
  • 4 cups whole milk
  • 1 teaspoon dry mustard
  • 1/4 teaspoon onion powder
  • 1 teaspoon kosher salt
  • Freshly ground pepper to taste
  • 5 cups cubed day old bread (such as rustic French or Italian loaf), cut into 3/4 to 1-inch cubes
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup sliced mushrooms, optional
  • 1/2 cup peeled, cored, chopped tomatoes, optional
Instructions:
  • Brown the sausage in a skillet over medium heat, breaking it into pieces and cooking until all sides are browned. If needed, cook in batches. While cooking, crumble the larger chunks into smaller pieces for even distribution in the casserole. Once lightly browned, transfer to a paper towel-lined plate to absorb excess fat.
  • In a large bowl, combine eggs, milk, dry mustard, onion powder, salt, and pepper, and whisk until fully blended.
  • Create the casserole: Butter a 9 x 13-inch baking pan and add cubed bread. Sprinkle cheese, tomatoes, and mushrooms (if using). Top with evenly distributed browned crumbled sausage. Pour the egg milk mixture over the casserole.
  • If making ahead, refrigerate the covered casserole for several hours or overnight. If baking immediately, allow the casserole to rest for 10 minutes to let the bread soak up the milk-egg mixture before baking.
  • Preheat the oven to 325°F when ready to bake.
  • Bake the casserole uncovered for approximately 1 hour, loosely tenting with foil if the top starts to brown too rapidly.
