Savory egg casserole with turkey sausage, cauliflower tots, perfect for breakfast prep.
Ingredients:
  • 1 (14- to 16-ounce package) frozen cauliflower tots
  • 1 tablespoon olive oil
  • 1 pound turkey sausage
  • 1 cup chopped onion
  • 4 cups chopped broccoli
  • 1 medium red bell pepper, chopped
  • 1 medium green bell pepper, chopped
  • 6 large eggs
  • 1 cup fat-free milk
  • salt to taste
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper
  • 0.5 cup shredded Swiss cheese
  • 0.5 cup grated Parmesan cheese
Instructions:
  • Preheat the oven to 350°F (175°C) and coat a 9x13-inch baking dish with cooking spray. Evenly arrange the cauliflower tots in the dish.
  • In a large skillet over medium heat, gently sauté the sausage and onion until the sausage is nicely browned, approximately 5 minutes. Add broccoli and bell peppers and continue to cook until the vegetables start to soften, around 10 minutes. Finally, generously spoon this flavorful mixture over the tater tots in the prepared dish.
  • In a bowl, beat eggs with milk, salt, black pepper, and cayenne. Pour the mixture evenly over sausage, vegetables, and tots, then top with Swiss and Parmesan cheeses.
  • Bake covered in a preheated oven for 20 minutes, then uncover and bake until bubbly for an additional 30 minutes.
