Versatile breakfast casserole that can be prepped ahead with your favorite ingredients. Perfect for any meal!
Ingredients:
  • For the breakfast casserole base:
  • 6 to 10 large eggs
  • 2 to 3 cups grated cheddar cheese
  • 6 slices white bread
  • Salt
  • Pepper
  • For the possible additions:
  • 1 cup corn kernels
  • 1/2 cup chopped broccoli
  • 1/2 cup sliced mushrooms
  • 1/4 cup sliced green onions
  • 1 cup cubed ham
  • 3 slices cooked bacon
  • 1 teaspoon Herbes de Provence
  • 1/4 to 1/2 teaspoon cumin
Instructions:
  • Heat the oven to 350°F.
  • Create the casserole base by whisking together eggs in a large bowl, combining with milk and cheese, then gently folding in the bread until all pieces are coated (be careful not to over mix to maintain bread texture).
  • Season to perfection: Season with salt and pepper, unless using Italian sausage. For extra add-ins, ensure everything is well-coated by whisking in 2 tablespoons of milk for every additional beaten egg.
  • Prepare and bake the casserole: Grease a 9x13-inch casserole dish with butter and pour in the mixture. Bake in a 350°F oven for 50-60 minutes until the top is golden brown and the center is springy to the touch. Let cool for 10 minutes before serving. Enjoy!
