Transform a classic egg and cheese bagel sandwich into a convenient make-ahead breakfast casserole for a satisfying and simple crowd-pleasing dish!
Ingredients:
  • 6 (20-ounce package) everything bagels
  • 7 large eggs
  • 2 1/2 cups half-and-half
  • 1/8 teaspoon black pepper
  • 1/2 tablespoon vegetable oil
  • 1 pound breakfast sausage (I used sage-flavored)
  • 1 red bell pepper, diced (about 1 cup)
  • 1 small yellow onion, peeled and diced (about 1 cup)
  • 2 tablespoons chopped fresh parsley, divided
  • 3 cups (8 ounces) sharp cheddar cheese, shredded and divided
Instructions:
  • Preheat your oven to 350°F and lightly grease a 13”x 9” casserole dish.
  • Slice the bagels into bite-sized pieces with a serrated bread knife. Cut each bagel in half from top to bottom, then each half into fourths, aiming for pieces no larger than an inch.
  • Prepare a luxurious egg mixture by whisking together eggs, half-and-half, salt, and pepper until smooth. Gently fold in the bagels until well coated in the mixture. Let it sit aside to absorb the flavors as you brown the sausage.
  • In a large skillet over medium-high heat, heat oil until shimmering. Add breakfast sausage and cook until browned, breaking it into small chunks. Create a well in the center, add diced peppers and onions, and cook for 3-4 minutes until glossy and soft. Drain excess fat and let cool for 5 minutes. Time to shred your cheese while it cools!
  • Gently mix together the slightly cooled sausage, bagel, and egg mixture. Stir in 1 tablespoon of parsley and 2 cups of cheddar cheese until evenly combined.
  • Prepare the casserole dish by pouring the mixture into it and covering it with aluminum foil. For a make-ahead option, refrigerate the dish overnight. When ready to bake, take the casserole dish out of the refrigerator 20 minutes before baking and proceed as directed.
  • Bake the casserole: Bake covered with foil in a preheated oven for 20 minutes. Uncover and bake for another 25 minutes until the center is set and the top is golden brown.
  • Once out of the oven, generously sprinkle the remaining cheese and fresh parsley over the dish. Let the casserole cool for 10 minutes before digging in.
