No Bake Strawberry Cheesecake

Fluffy no-bake cheesecake with a delicious strawberry twist.
Ingredients:
  • 1 (3 ounce) package strawberry-flavored gelatin (such as Jell-O®)
  • 1 cup boiling water
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 1 (5 ounce) can cold evaporated milk
  • 1 (9 inch) prepared graham cracker crust
Instructions:
  • In a bowl, mix strawberry gelatin with boiling water until dissolved; refrigerate until slightly thickened, for about 20 minutes.
  • Mix cream cheese, sugar, and vanilla extract until creamy and smooth.
  • Whip evaporated milk in a separate bowl until thick using an electric mixer. Gradually add strawberry gelatin mixture while beating continuously. Gently fold in cream cheese mixture to create the cheesecake filling.
  • Place the graham cracker crust on a baking sheet or plate for stability. Then pour the cheesecake filling into the crust and refrigerate until the cake is set, for at least 3 1/2 hours.
