Upgrade your meatloaf with a zesty Tex-Mex twist using cornbread stuffing for added texture and flavor.
Ingredients:
  • 1 serving cooking spray
  • 2 cups corn bread stuffing mix
  • 1 pound ground beef
  • 1 pound ground pork
  • 0.5 cup diced onion
  • 0.5 cup diced green bell pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 2 eggs, beaten
  • 2 teaspoons seasoned salt
  • 1 teaspoon garlic and herb seasoning blend
  • 0.5 teaspoon ground black pepper
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously spray a 9x5 inch loaf pan with nonstick cooking spray.
  • Use a food processor or blender to pulse the stuffing mix until fine crumbs form. Transfer the crumbs to a large bowl and combine with ground beef, ground pork, onion, green pepper, tomatoes, eggs, seasoned salt, seasoning blend, and pepper. Thoroughly mix the ingredients using your hands and then press the mixture into the prepared pan.
  • Roast until meat is no longer pink in the middle, for 45 minutes to 1 hour, and the internal temperature reaches at least 160°F (72°C). Let it rest for 5 to 10 minutes before cutting.
