Try this simple galette with blackberries and peaches or any seasonal fruit you prefer - it's a foolproof delight!
Ingredients:
  • 2 cups all-purpose flour
  • 1 cup shortening
  • 0.5 cup cold water
  • 3 tablespoons sugar
  • 2 tablespoons cornstarch
  • 2 cups sliced fresh peaches
  • 1 cup fresh blackberries
Instructions:
  • Preheat the oven to a toasty 450 degrees F (220 degrees C).
  • Combine flour and salt in a bowl. Use your fingers to rub in the shortening until the mixture looks like oatmeal. Slowly add water until the dough just comes together. Lightly knead the dough until it holds together. Chill in the refrigerator while you work on the fruit.
  • Combine the sugar and cornstarch in a medium bowl. Gently mix in the peaches and blackberries until coated. Set aside.
  • Gently shape the crust dough into a circle similar in size to a dinner plate, then transfer it to a baking sheet. Arrange the fruit in a mound at the center of the dough, ensuring there is a 1 to 2-inch border of exposed dough. Discard any excess juices from the fruit. Fold the edges of the dough over the fruit, making sure some of the filling is covered, but leaving the center of the tart exposed.
  • Bake for 25-30 minutes in a preheated oven until fruit bubbles and the crust turns golden brown. Allow to cool completely before slicing into wedges and serving.
