Quick and easy Baileys cheesecake truffles made with mascarpone, white chocolate, Baileys, and chocolate cookies - no baking required!
Ingredients:
  • 25 milk chocolate topped butter cookies (such as Le Petit Ecolier), crushed
  • 1 (8 ounce) container mascarpone cheese
  • 0.33333334326744 cup Irish cream liqueur (such as Baileys®)
  • 1 (9.7 ounce) package white chocolate, chopped
  • 2 ounces dark chocolate, chopped
Instructions:
  • Mix crushed cookies, creamy mascarpone cheese, and rich Irish cream liqueur together until smooth and well combined.
  • Prepare a baking sheet with parchment paper. Scoop small portions of cookie mixture to create twenty 1-inch balls. Place them on the baking sheet and refrigerate for 45 minutes or freeze for 15 to 20 minutes.
  • In a microwave-safe bowl, add white chocolate chips. Microwave in 10 to 15 seconds intervals, stirring thoroughly each time, until the white chocolate is nearly melted. Stir continuously until completely smooth.
  • Coat cheesecake balls in melted white chocolate, then refrigerate until the chocolate sets, approximately 40-50 minutes.
  • Put the dark chocolate chips in a small microwave-safe bowl. Microwave for 10 to 15 seconds at a time, stirring after each interval. Repeat until the dark chocolate is almost melted, then stir until smooth and fully melted.
  • Drizzle rich dark chocolate over cold cheesecake balls and let it firm up for around 30 minutes.
