No-bake Baileys slice recipe

Indulge in a decadent no-bake slice made with choc ripple biscuits, creamy cream cheese, and a touch of Bailey's Irish cream - a guaranteed crowd pleaser!
Ingredients:
  • 250g pkt Arnott’s Choc Ripple biscuits
  • 100g butter, melted, cooled
  • 9.00 gm gelatine powder
  • 500g cream cheese, at room temperature, chopped
  • 100g (1/2 cup) caster sugar
  • 125ml (1/2 cup) Original Irish Cream liqueur
  • 300ml thickened cream
  • Dark chocolate, grated, to sprinkle
Instructions:
  • Prepare a 16 x 26cm slice pan by greasing it and lining it with baking paper, ensuring the paper hangs over the sides. Pulse the biscuits in a food processor until they form fine crumbs. Pour in the melted butter and blend briefly until mixed. Transfer the mixture to the pan, use the back of a spoon to press and smooth the surface firmly. Chill in the fridge for 30 minutes until set.
  • In a microwave-safe bowl, combine 2 1/2 tablespoons of water with gelatine. Allow it to soften for 2-3 minutes. Microwave the mixture on High for 20 seconds or until hot. Whisk with a fork until fully dissolved. Let it cool to room temperature.
  • In a large bowl, combine cream cheese and sugar until smooth using electric beaters. Mix in Baileys and 125ml (1/2 cup) cream until well combined. Scrape down the sides of the bowl with a spatula as needed. Finally, beat in the cooled gelatine.
  • Drizzle the luscious cream cheese mixture onto the biscuit base, then delicately spread it with a spatula to create a silky surface. Chill in the fridge for 3 hours until firm. Gently remove from the pan and slice into delectable squares. Store in an airtight container in the fridge for 5 days of indulgent enjoyment.
  • Whip the remaining cream using electric beaters. Top each square with a dollop or piped whipped cream and sprinkle with grated chocolate before serving.
