Indulgent chocolate peanut butter no-bake cookies with oats, dairy-free almond milk.
Ingredients:
  • 2 cups white sugar
  • 0.5 cup margarine
  • 0.5 cup almond milk
  • 4 tablespoons unsweetened cocoa powder
  • 0.5 cup peanut butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2.5 cups quick oats
  • 1 cup sweetened flaked coconut
Instructions:
  • In a saucepan, mix sugar, margarine, almond milk, and cocoa. Bring to a boil for 5 minutes. Let it boil for an additional minute, then remove from heat. Stir in peanut butter until melted. Add vanilla extract and almond extract, stirring well. Mix in oats and coconut until dough is evenly combined.
  • Spoon cookie dough onto wax paper. Allow it to firm up and cool completely for approximately 30 minutes.
