No-Bake Creamy Strawberry Pie

Creamy strawberry Greek yogurt filling for a simple no-bake dessert.
Ingredients:
  • 1/3 cup water
  • 1 1/2 teaspoons unflavored gelatin
  • 4 oz (half of 8-oz package) 1/3-less-fat cream cheese (Neufchâtel), softened
  • 3 containers (6 oz each) Greek Fat Free strawberry yogurt
  • 1 1/2 cups Cool Whip lite frozen whipped topping, thawed
  • 1 1/2 cups sliced fresh strawberries
  • 1 graham cracker crumb crust (6 oz)
Instructions:
  • In a small saucepan, add water and sprinkle gelatin over the top. Let it sit for 1 minute. Heat over low heat for about 2 minutes, stirring constantly until the gelatin dissolves. Cool slightly before using.
  • In a medium bowl, use an electric mixer to beat cream cheese until smooth. Mix in yogurt and gelatin until well blended on low speed. Gently fold in whipped topping. Spoon the mixture into the crust and refrigerate until set, approximately 2 hours.
  • To enhance presentation, top the pie with extra whipped topping and fresh sliced strawberries before serving.
