No-Bake French Silk Pie

Whip up a delicious no-bake chocolate pie in no time!
Ingredients:
  • 1 1/2 cups vanilla wafer cookie crumbs
  • 1/3 cup butter, melted
  • 2/3 cup granulated sugar
  • 2 eggs
  • 2 oz unsweetened baking chocolate
  • 1/3 cup butter, softened
  • 1 1/2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • Chocolate curls or chocolate shavings
Instructions:
  • Combine cookie crumbs with rich melted butter in a large bowl until crumbs are perfectly moistened and coated with butter. Press the delectable mixture firmly into the bottom and up the sides of a 9-inch pie plate. Chill in the refrigerator for 10 minutes.
  • In a small saucepan, whisk together granulated sugar and eggs until smooth. Heat over medium heat until mixture reaches 160°F, thickens slightly, and coats the back of a metal spoon.
  • Take the mixture off the heat and blend in the chocolate until it's melted and creamy. Allow it to cool a bit, then add the softened butter and mix well. Let it cool until warm, stirring occasionally.
  • In a large bowl, whip the cream until it thickens. Mix in powdered sugar until stiff peaks form. Gently fold half of the whipped cream into the chocolate mixture, then pour into a chilled pie crust. Top the center of the pie with the remaining whipped cream and decorate with chocolate curls or shavings.
  • Chill until serving time. Cover any leftovers and keep refrigerated.
