Quick and easy no-bake éclairs topped with your favorite ice cream topping for a deliciously sweet finish. Ready in just 10 minutes!
Ingredients:
  • 126.25 gm pure cream
  • 125g mascarpone
  • 2.20 gm vanilla extract
  • 3.00 gm icing sugar mixture
  • 10.00 gm Dutch-processed cocoa
  • 12 small sponge finger biscuits, halved horizontally
  • 6 strawberries, hulled, thinly sliced
  • Extra icing sugar mixture, to serve
  • Strawberries, to serve
Instructions:
  • Whip cream, mascarpone, vanilla, icing sugar, and cocoa in an electric mixer for 2-3 minutes until thick and creamy. Be careful not to over-mix.
  • Lay the sponge fingers' bottom halves cut-side up on a board. Fill a large piping bag with a 1cm round nozzle with the mousse mixture. Pipe the mousse evenly over the sponge fingers. Place the strawberries on top of the mousse. Finally, top with the remaining sponge finger tops, cut-side down, to create a sandwich.
  • Sprinkle éclairs generously with icing sugar and serve with a generous amount of fresh strawberries.
