Summer no-bake lasagna with lemony ricotta, tomatoes, zucchini, and fresh basil.
Ingredients:
  • 3/4 teaspoon kosher salt
  • 6 to 8 lasagna noodles
  • 1 (16-ounce) container whole milk ricotta cheese
  • Zest of one lemon
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil, divided
  • 1/4 cup minced shallots
  • 1 bunch Swiss chard, stems removed and chopped (save the leaves for another purpose)
  • 2 1/2 cups zucchini, sliced 1/2-inch thin and quartered
  • 1 1/2 cups summer squash, sliced 1/2-inch thin and quartered
  • 2 1/2 cups mixed cherry or grape tomatoes, halved
  • 1 bunch basil, largest leaves
Instructions:
  • Boil lasagna noodles in a pot of salted water until al dente. Remove noodles with tongs and let them cool on a wire rack.
  • Whip together ricotta cheese, lemon zest, 1/4 teaspoon salt, and a dash of freshly ground pepper using a hand mixer with the whisk attachment for about a minute until fluffy and airy. This step helps make it spreadable. Set aside.
  • Heat 1 tablespoon of olive oil in a medium sauté pan over medium heat until shimmering. Sauté shallots, chard stems, and garlic with salt and pepper for 3 to 5 minutes until starting to soften. Add zucchini and squash, cook for another 5 minutes until tender. Transfer veggies to a separate bowl.
  • Sauté the tomatoes: In the same pan, pour 1 tablespoon of olive oil and add the halved tomatoes without cleaning the pan. Sauté briefly until they soften and release juices, around a couple of minutes in the hot pan.
  • Build the lasagna: Cut the noodles into thirds. Place a noodle piece on a plate and spread whipped ricotta (a couple of tablespoons) evenly. Follow with squash and shallot mix (about 2 tablespoons), then tomatoes and basil. Add another noodle layer and repeat twice. Do the same for other servings. Alternatively, present a stack of noodles divided by wax paper or damp paper towels. Let guests assemble their own lasagna with preferred ingredients. Serve promptly.
