Whip up easy no-bake M&M cookies with peanut butter, chocolate, and oats for a quick and chewy treat without using the oven.
Ingredients:
  • 3 1/2 cups (315g) old-fashioned oats
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 cup (113g) unsalted butter
  • 1 1/4 cups (250g) sugar
  • 1/2 cup whole or 2% milk
  • 1 cup (250g) creamy peanut butter
  • 1/2 teaspoon vanilla extract
  • 1 cup M&M’s
Instructions:
  • Line a baking sheet with parchment paper and set aside.
  • Combine oats and cocoa powder in a small bowl. In a medium saucepan over low heat, melt butter. Stir in sugar and milk until sugar dissolves, about 1 minute. Increase heat to medium-high and bring to a rolling boil. Boil without stirring for precisely 2 minutes.
  • Incorporate the peanut butter and vanilla extract off the heat. Combine the oats and cocoa powder and let sit briefly, then fold in half of the M&M’s after 2 minutes.
  • Scoop and shape the cookies: Drop dough balls on the lined baking sheet using a cookie scoop. Flatten and round the dough mounds gently with your fingers. Press extra M&M’s onto each cookie.
  • Allow the cookies to rest: Leave them at room temperature for 1 hour to firm up. For a firmer texture, refrigerate them for 45 minutes. Store the cookies in an airtight container at room temperature for up to 5 days, in the fridge for up to 2 weeks, or in the freezer for up to 3 months.
