Snake cake: a fun and delicious treat for reptile enthusiasts.
Ingredients:
  • 2 x 250g packets sponge rollettes (see note)
  • 300g butter or margarine, at room temperature
  • 262.50 gm pure icing sugar, sifted
  • 6.60 gm vanilla essence
  • Yellow and green food colouring
  • Yellow and green Smarties (for eyes and scales)
  • Small piece liquorice (for eyes and nostrils)
  • 1 red jelly snake (for tongue)
Instructions:
  • Prepare the icing: Beat the ingredients with an electric mixer on medium speed for 4 minutes or until the mixture is light and fluffy.
  • Position 8 rollettes on board to create a snake shape, then trim 2 rollettes and place them as the head and tail.
  • Utilize trimmed head and tail pieces and any remaining rollettes to fill in the gaps as shown in technique picture.
  • Tint icing yellow, then mix in green color gradually to achieve a vibrant lime green shade. Reserve 1/8 teaspoon of icing. Frost cake with the remaining colorful icing from edge to edge, following the image provided for reference.
  • Set aside 2 yellow Smarties for eyes. Arrange the rest of the Smarties over the cake. Cut 2 small strips of licorice. Attach a licorice strip to each reserved Smartie using reserved icing to create eyes. Place them on the cake. Cut 2 small dots from licorice for nostrils and place on the cake. Shape a jelly snake into a forked tongue and place it on the cake.
