Cool and refreshing summer salad.
Ingredients:
  • 1 smoked chicken (see note)
  • 1/2 Chinese cabbage, finely shredded
  • 2 carrots, peeled, grated
  • 4 green onions, thinly sliced
  • 250.00 ml beansprouts, trimmed
  • 3 oranges
  • 196.88 gm fresh orange juice
  • 58.75 gm light sour cream
  • 28.60 gm honey
  • 18.20 gm olive oil
  • 11.80 gm Dijon mustard
Instructions:
  • Peel off chicken skin and meat, discard bones. Shred meat and place in a large bowl. Add cabbage, carrots, onions, and sprouts. Mix well.
  • Peel and cut oranges into segments with a sharp knife, then add them to the chicken mixture.
  • Prepare the dressing by combining orange juice, sour cream, honey, oil, mustard, salt, and pepper in a screw-top jar. Shake vigorously to mix well. Drizzle the dressing over the chicken salad, toss gently, and serve with bread rolls on the side if preferred.
