Japanese-style shredded chicken salad recipe

Speedy chicken and cabbage salad with a touch of sweet white miso for added flavor.
Ingredients:
  • 400g smoked chicken breast, skin removed, shredded
  • 160g (2 cups) shredded wombok (Chinese cabbage)
  • 1 bunch radishes, trimmed, thinly sliced
  • 2 small zucchini, thinly sliced
  • 1 red apple, unpeeled, cut into matchsticks
  • 1/4 small red cabbage, shredded
  • 2 sheets nori, torn
  • 18.00 gm white miso paste
  • 30.00 ml mirin
  • 7.95 gm salt-reduced soy sauce
  • 2 tsp sesame oil
  • Toasted white and black sesame seeds, to serve
Instructions:
  • Mix chicken, wombok, radish, zucchini, apple, red cabbage, and nori together in a bowl.
  • Combine the miso, mirin, soy sauce, and sesame oil in a small bowl. Pour the mixture over the salad and toss until well combined. Serve in individual bowls and garnish with sesame seeds.
