Easy no-knead cinnamon raisin bread - bakery quality at home!
Ingredients:
  • 3 cups bread flour
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon table salt
  • 0.5 teaspoon dry instant yeast
  • 1.5 cups warm water (110 degrees F (43 degrees C))
  • 0.75 cup golden raisins
  • 1 tablespoon bread flour
  • parchment paper
Instructions:
  • Combine 3 cups of flour with sugar, cinnamon, salt, and yeast in a large bowl. Add warm water and mix until a shaggy dough forms. Fold in raisins until evenly scattered throughout.
  • Seal the bowl with plastic wrap and let it rest in a cozy, draft-free spot or in the oven with the light on for 30 minutes.
  • Dust a clean work surface with 1 tablespoon of flour. Transfer the dough onto the surface and gently fold it over itself using a bench scraper, incorporating the flour. Clean and dry the bowl.
  • Line the bowl with parchment paper, folding it to fit smoothly against the sides. Add the dough to the lined bowl and cover with plastic wrap. Allow to rise for 30 minutes.
  • Place a 5-quart Dutch oven in the oven and preheat to 400°F (200°C).
  • Take the Dutch oven out of the oven and carefully place the dough with the parchment liner inside. Cover with the lid.
  • After 30 minutes of baking, remove the cover and bake for an additional 5 minutes. Then, transfer the bread to a wire rack, remove the parchment paper, and let it cool completely for about 2 hours before slicing.
