No-oven pizza

One-pan stovetop pizza: no oven needed, quicker and cheaper than takeout, packed with 3 servings of veggies in one delicious dish!
Ingredients:
  • 250 g self-raising flour plus extra for dusting
  • 1 red onion
  • ½ a red pepper
  • ½ x 400g tin of chopped tomatoes
  • 50 g mature Cheddar cheese
  • ½ a butterhead or round lettuce
  • 1 carrot
  • red wine vinegar
Instructions:
  • In a bowl, combine flour and a pinch of sea salt. Gradually stir in up to 150ml of cold water using a fork until a ball of dough forms. Knead on a floured surface for 1 minute, then set aside. Heat a 30cm frying pan with 1 tablespoon of olive oil. Slice the onion and pepper, adding to the pan. Season with salt and pepper, cover, and cook until golden, about 2 minutes. Roll out the dough to pan size. Transfer cooked veggies to a board. Gently place dough in the pan, pressing to create dimples. Cover and cook for 3 minutes. Flip over, spread mashed tomatoes, add veggies and grated cheese. Cover and cook until cheese melts and base is crispy, about 3-4 minutes. Toss lettuce with red wine vinegar and olive oil. Serve pizza with salad.
