Effortless and comforting no-peek chicken: Baked chicken, rice, veggies, and mushroom soup cooked together for a tender and delicious meal.
Ingredients:
  • cooking spray
  • 2 cups long-grain white rice
  • 2 cups water
  • 1 (15 ounce) can cream of mushroom soup
  • 1 (15 ounce) can cream of chicken soup
  • 0.5 yellow onion, chopped
  • 0.5 red bell pepper, chopped
  • 1 (1-ounce) package onion soup mix
  • 1 teaspoon chopped fresh oregano
  • 4 chicken thighs
  • 1.5 teaspoons all-purpose seasoning
Instructions:
  • Prepare all your ingredients. Preheat your oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with cooking spray.
  • Combine rice, water, chicken soup, mushroom soup, onion, bell pepper, onion soup mix, and oregano in a large bowl, whisk until fully blended.
  • Transfer the seasoned rice mixture into the prepared baking dish.
  • Season chicken thighs with a flavorful seasoning salt and place them on top of the rice mixture. Seal the dish with foil to lock in all the delicious flavors.
  • Roast covered in the preheated oven for 1 hour 30 minutes until the internal temperature reaches at least 165°F (74°C) when checked with an instant-read thermometer.
