Tender slow-cooked Polynesian short ribs, perfect for potlucks, served over fluffy rice.
Ingredients:
  • 3 large onions, chopped
  • 7 pounds beef short ribs, or more to taste
  • salt and ground black pepper to taste
  • 3 cups water
  • 2 (20 ounce) cans pineapple chunks in juice, undrained
  • 1.5 cups brown sugar
  • 7 tablespoons Worcestershire sauce
  • 5 tablespoons ketchup
  • 4 cloves garlic, minced, or more to taste
  • 1 tablespoon dried sage
  • 1 tablespoon dried thyme
  • 1.5 teaspoons dry mustard
Instructions:
  • Layer the bottom of your slow cooker with a bed of onions. Season the short ribs generously with salt and pepper, then lay them on top of the onions.
  • Combine water, juicy pineapple chunks, rich brown sugar, savory Worcestershire sauce, tangy ketchup, aromatic garlic, earthy sage, fragrant thyme, and zesty mustard in a bowl; then drizzle over the ribs.
  • Cook on High for 4 hours or on Low for 6 to 8 hours.
