Golden brittle with crunchy nuts - perfect coffee pairing.
Ingredients:
  • 70g (1/2 cup) pecan halves
  • 75g (1/2 cup) dry-roasted hazelnuts
  • 85g (1/2 cup) blanched almonds
  • 430g (2 cups) caster sugar
  • 125ml (1/2 cup) water
Instructions:
  • Prepare a baking tray with non-stick baking paper and evenly spread the mixed nuts on the tray.
  • In a small saucepan, mix sugar and water and stir over low heat until the sugar dissolves completely. Bring to a boil and cook without stirring for 15-20 minutes, occasionally brushing down the sides of the pan with a wet pastry brush, until the mixture turns golden. Let it sit for 1-2 minutes until bubbles disappear.
  • Drizzle the toffee evenly over the nuts. Allow it to set for 10 minutes before breaking it into shards.
