Delicious squash with crispy cereal topping and zesty citrus flavor from Betty Crocker's Diabetes Cookbook.
Ingredients:
  • 1 buttercup squash (2 to 2 1/2 pounds)
  • 1/4 teaspoon salt
  • 1 tablespoon butter or margarine, melted
  • 1 cup Basic 4™ cereal, coarsely crushed (1/2 cup)
  • 1 teaspoon grated orange peel
Instructions:
  • Preheat the oven to 350°F. Quarter the squash and scoop out the seeds and fibers. Arrange the squash, cut side up, in a 13x9x2 inch rectangular baking dish without greasing it.
  • Season the squash with a sprinkle of salt. Add water to the baking dish until it reaches a depth of 1/4 inch. Cover and bake for 40 to 50 minutes until the squash is tender.
  • Combine the butter, cereal, and orange peel, then stuff the mixture into the squash.
