Nut-free basil and roasted garlic pesto

Nut-free, gluten-free pesto that rivals traditional version with just 5 ingredients.
Ingredients:
  • 62.50 ml pepitas
  • 2 garlic cloves, unpeeled
  • 113.75 gm extra virgin olive oil
  • 250.00 ml firmly packed fresh basil leaves
  • 62.50 ml finely grated parmesan
Instructions:
  • Preheat the oven to 220C (200C fan-forced) and line a baking tray with baking paper.
  • 1. Lay pepitas evenly on the tray. Place garlic on a piece of foil and drizzle with 1 tablespoon of oil. Seal foil around the garlic. Roast in the oven for 20 minutes, adding pepitas to the oven for the last 5 minutes. Allow everything to cool fully.
  • Combine fresh fragrant basil leaves and crunchy pepitas in a small food processor. Squeeze the aromatic garlic out of the skins directly into the food processor. Blend until nearly smooth, making sure to scrape down the sides occasionally for a consistent texture.
  • While the food processor is running, slowly pour in the rest of the oil in a smooth, continuous stream. Keep blending until everything is mixed together. Put the mixture in a bowl, then mix in the parmesan. Season to taste.
