Nutty bacon rolls

Ingredients:
  • 125.00 ml roasted salted macadamia nuts
  • 165.00 gm mango chutney
  • 10 thin bacon rashers, rind removed
  • 18.40 gm vegetable oil
Instructions:
  • Pulse nuts in a food processor until finely chopped. Transfer to a bowl and stir in chutney until well combined.
  • Spread a thin layer of the chutney mixture on one side of each bacon rasher. Cut them in half horizontally, then roll each piece up like a Swiss roll and secure with a toothpick.
  • Preheat a barbecue plate over medium-high heat. Brush bacon rolls with oil and grill, turning occasionally, until golden and fully cooked, about 5 minutes. Season with pepper and serve warm.
