Start your day right with caffeinated granola packed with crunchy pepitas, cashews, hazelnuts, and more - a perfect breakfast boost.
Ingredients:
  • 300.00 gm traditional rolled oats
  • 125.00 ml pepitas
  • 250.00 ml raw cashews
  • 165.00 ml skinless hazelnuts
  • 2.50 gm ground cinnamon
  • 2.50 gm ground ginger
  • 1.25 gm mixed spice
  • 89.38 gm honey
  • 62.50 ml strong brewed coffee
  • 16.80 gm coconut oil, melted
  • 8.80 gm vanilla extract
  • 27.50 gm coconut flakes
Instructions:
  • Preheat your oven to 180C/160C fan-forced, and prepare 2 large baking trays by lining them with baking paper.
  • In a large bowl, combine oats, pepitas, cashews, hazelnuts, cinnamon, ginger, and mixed spice. Spread the mixture evenly onto prepared trays. In a jug, mix together honey, coffee, oil, and vanilla. Drizzle the mixture over the oats on the trays, stirring well to coat. Finish by sprinkling a pinch of salt over the top.
  • Bake the mixture for 20-25 minutes, stirring twice. After that, sprinkle coconut flakes, bake for an additional 3-4 minutes until golden, then remove from the oven. Let it cool completely before serving (see notes).
