Easy oatmeal cake with quick oats, raisins, and simple ingredients for a hearty breakfast or brunch.
Ingredients:
  • 1.25 cups boiling water
  • 1 cup quick cooking oats
  • 0.5 cup butter
  • 0.75 cup packed brown sugar
  • 0.75 cup white sugar
  • 2 eggs
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1.5 cups all-purpose flour
  • 0.5 cup raisins
Instructions:
  • Cover the quick oats with boiling water and allow them to sit for 20 minutes.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and grease a 9x13-inch baking pan with a touch of oil.
  • In a large bowl, use an electric mixer to cream together the sugar and butter until creamy. Incorporate the eggs, followed by mixing in the oats and vanilla.
  • Combine baking soda, salt, cinnamon, and flour until mixed. Add raisins and coat evenly.
  • Combine the raisin and flour mixture with the oatmeal mixture, stirring until well mixed. Then, pour the batter into the prepared pan.
  • Bake in the oven until a toothpick comes out clean, about 35 minutes.
