Spiced oatmeal cake with apple, coconut, and praline topping - simple and flavorful!
Ingredients:
  • 1 cup quick-cooking oats
  • 1.25 cups boiling water
  • 1.3333333730698 cups all-purpose flour
  • 1 (0.81 ounce) package instant vanilla pudding mix (such as Jell-O®)
  • 2 teaspoons ground cinnamon
  • 1.5 teaspoons salt
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground allspice
  • 1 cup packed brown sugar
  • 0.5 cup butter
  • 2 eggs
  • 1 cup shredded coconut
  • 1 medium Granny Smith apple - peeled, cored, and diced
  • 4 tablespoons reduced-fat coconut milk
  • 1 cup pecans
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a 9x13-inch baking pan by greasing and flouring it.
  • In a bowl, combine oats with boiling water. Let it sit.
  • Combine and sift flour, pudding mix, cinnamon, salt, baking soda, cloves, and allspice in a small mixing bowl. Set aside.
  • Using an electric mixer, whip brown sugar, white sugar, and butter until light and fluffy. Add eggs one at a time, mixing well. Gently fold in flour mixture and coconut until combined; then add softened oats and apples, being careful not to overmix. Transfer the batter to the prepared pan.
  • Bake in the oven until golden on top and a toothpick inserted in the center comes out clean, about 35-40 minutes.
  • In a saucepan over medium-high heat, melt butter until it turns golden brown, stirring constantly for 2 to 3 minutes. Lower the heat, then mix in brown sugar and coconut milk until smooth; add coconut and pecans. Take off the heat.
  • After taking the cake out of the oven, generously spread the butter mixture over the top. Place the oven rack 2 to 4 inches below the heat source and preheat the broiler.
  • Place cake under the broiler in the preheated oven for about 2 minutes, until the topping bubbles and browns. Be careful not to burn it. Remove the pan from the oven and let the topping absorb into the cake for about 10 minutes before serving.
