Slow simmer chicken and broccoli cauliflower soup in flavorful broth for a comforting and hearty meal.
Ingredients:
  • 4 cups water
  • 6 bone-in chicken thighs
  • 2 tablespoons olive oil
  • 2 carrots, chopped
  • 0.5 onion, diced
  • 4 cloves garlic, chopped
  • 1.5 teaspoons salt
  • 1 (32 ounce) carton chicken broth
  • 1 head broccoli, trimmed and chopped
  • 0.25 head cauliflower, trimmed and chopped
  • 1 zucchini, trimmed and chopped
Instructions:
  • In a pot, combine water and chicken thighs, bring to a boil, then simmer for about 30 minutes until chicken is tender, skimming off any scum that forms.
  • In a large pot, warm olive oil over medium heat. Sauté carrots and onions until slightly softened, about 3-4 minutes. Add garlic and salt, and continue cooking for 1 minute.
  • Place the cooked chicken and its broth into a large pot. Pour in the chicken broth and bring the mixture to a boil. Lower the heat and cover the pot slightly ajar. Let it simmer for at least 1 hour, or up to 4 hours. Finally, remove from heat.
  • Place the chicken on a work surface and shred the meat using 2 forks after removing the skin, bones, and cartilage. Return the shredded chicken to the pot along with broccoli, cauliflower, and zucchini. Bring the mixture to a simmer over medium-high heat, then reduce the heat and let it gently simmer until the vegetables are tender, about 20 to 30 minutes.
