Savory Mexican-seasoned chicken and mushrooms in a comforting rice bake.
Ingredients:
  • 4 teaspoons olive oil
  • 6 tablespoons sour cream
  • 4 ounces shredded Cheddar cheese
  • 2 cups fresh sliced mushrooms
  • 1 (16 ounce) jar salsa
  • 2 cups cooked white rice
  • 8 ounces boneless chicken breast halves, cooked and diced
Instructions:
  • Heat oil in a skillet over medium heat and saute mushrooms.
  • Mix together mushrooms, creamy sour cream, melty cheese, zesty salsa, fluffy rice, and tender chicken. Transfer the mixture into a prepared casserole dish.
  • Bake at 350°F (175°C) for 25-35 minutes until golden brown.
