Savory Japanese pancake topped with mayo, nori, and pickled ginger.
Ingredients:
  • 125g pork mince
  • 300g plain flour
  • 8.00 gm baking powder
  • 250ml dashi
  • 2 eggs, lightly whisked
  • 250.00 ml finely shredded white cabbage
  • 3 green onions, trimmed, finely chopped
  • Ground white pepper, to season
  • 36.80 gm vegetable oil
  • 152.50 gm Japanese Worcestershire sauce (see note)
  • Japanese mayonnaise, to serve (see note)
  • Shredded nori, to serve
  • Pickled ginger, to serve
Instructions:
  • 1. Heat a frying pan over medium-high heat. Add pork and sauté, breaking it up, for 5 minutes or until fully cooked. Set aside to cool.
  • In a bowl, mix together flour and baking powder. Create a well in the center and pour in dashi and egg. Stir until a smooth batter forms. Add in cabbage, green onion, and pork mince. Season with ground white pepper to taste.
  • In a non-stick frying pan over medium-low heat, heat a bit of oil. Pour 1/2 cup of mixture into the pan and cook until bubbles form on the surface, about 2-3 minutes. Flip with a spatula, then brush the cooked side with Worcestershire sauce. Continue cooking for another 2 minutes until done. Flip again and cook for 1 more minute until the surface caramelizes. Transfer to a plate, cover with foil, and repeat with the remaining batter, oil, and Worcestershire sauce in 5 more batches.
  • Plate the okonomiyaki, generously drizzle with mayonnaise, and sprinkle with nori and pickled ginger. Serve promptly to enjoy the flavors at their peak.
