Oktoberfest pasta salad with bratwurst - a delicious German side dish for your potluck!
Ingredients:
  • 1 (16 ounce) package rotini pasta
  • 1 tablespoon liquid smoke
  • 1 teaspoon olive oil
  • 1 cup diced cooked bratwurst sausages
  • 4 tablespoons sliced green onions, divided
  • 1 tablespoon chopped garlic
  • 1 yellow bell pepper, finely chopped
  • 1 orange bell pepper, finely chopped
  • 0.5 cup diced celery
  • 0.5 cup chopped fresh parsley
  • 0.5 cup spicy mustard
  • 0.5 cup mayonnaise
  • 2 tablespoons water
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon white sugar
  • 1 teaspoon freshly ground black pepper
Instructions:
  • Bring a large pot of salted water to a lively boil, then add rotini along with a touch of liquid smoke. Cook for about 8 minutes until the rotini is al dente.
  • Cook diced bratwurst in olive oil with green onions and garlic until crispy. Let cool once done.
  • In a large bowl, mix together yellow and orange bell peppers, celery, parsley, mustard, mayonnaise, water, vinegar, sugar, and black pepper until well combined.
  • After draining the pasta, toss it into the vegetable mixture along with the bratwurst, onions, and garlic. Gently stir until everything is mixed well. Enjoy either warm or cold.
