Indulgent baked vanilla custard with fresh fruit and powdered sugar topping, a classic and simple dessert for any meal's grand finale.
Ingredients:
  • 2 large eggs
  • 1/3 cup white sugar
  • 1 teaspoon brown sugar
  • 1/4 teaspoon fine salt
  • 1 1/4 teaspoons vanilla
  • 1 1/4 cups whole milk
  • pinch of finely grated nutmeg for the tops
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C).
  • In a bowl, whisk together eggs, white sugar, brown sugar, salt, and vanilla until sugar is dissolved and batter is smooth, about 1 minute. Stir in milk until well combined.
  • Evenly distribute the batter among 4 (5-ounce) heat-proof ramekins.
  • Add a layer of hot water to a baking dish and nestle the ramekins inside. Sprinkle a delicate touch of freshly grated nutmeg over each ramekin.
  • Bake in the center of the preheated oven for 45 to 60 minutes until the custard is just set and a knife inserted near the center comes out clean. Check after 45 minutes as baking times can vary based on ramekin size and shape.
  • Transfer the custards to a wire rack to cool to room temperature. Then, place them on a tray, cover with plastic wrap, and refrigerate until cold, for at least 1 hour or up to overnight.
