Old-fashioned vanilla slice

Indulge in a decadent passionfruit vanilla slice for the perfect sweet treat.
Ingredients:
  • 2 sheets frozen butter puff pastry, partially thawed
  • 285.95 gm caster sugar
  • 130.00 gm cornflour
  • 97.50 gm vanilla custard powder
  • 1158.75 gm milk
  • 75g butter, chopped
  • 2 egg yolks, lightly beaten
  • 1 tsp vanilla bean paste
  • 375.00 gm pure icing sugar
  • 10g butter
  • 2 passionfruit, halved
Instructions:
  • 1. Preheat your oven to 200°C/180°C fan-forced. 2. Grease a 6cm-deep, 22cm square cake pan and line it with baking paper, extending 3cm above the edges. 3. Grease 2 baking trays and place a sheet of pastry on each tray. 4. Bake one tray at a time for 8 to 10 minutes until golden and puffed. 5. Gently flatten the pastry and allow it to cool before using.
  • In a heavy-based saucepan, combine sugar, cornflour, and custard powder over medium heat. Slowly whisk in the milk until smooth. Add butter and cook, stirring continuously, until the mixture simmers and thickens, about 8 to 10 minutes. Remove from heat and stir in egg yolks and vanilla for a rich and creamy custard.
  • Lay 1 pastry sheet in the base of the prepared pan, cut to the appropriate size. Pour the hot custard over the pastry. Place the second pastry sheet on top, cut to fit. Let it cool for 30 minutes before serving.
  • Prepare the passionfruit icing by combining icing sugar, butter, and passionfruit in a heatproof bowl set over a pan of simmering water. Stir until smooth and well combined. Spread the icing over the top of the pastry, then chill in the refrigerator for 4 hours or until cold. Cut into squares before serving.
