Elegant chicken and broccoli casserole with sherry cream sauce, topped with sliced almonds for a gourmet touch.
Ingredients:
  • 2 heads broccoli, cut into florets
  • 0.25 cup butter
  • 0.25 cup all-purpose flour
  • 3 tablespoons sherry
  • 2 cups chicken broth
  • 0.5 cup heavy cream
  • 0.5 teaspoon salt
  • 1 pinch ground black pepper
  • 2 cooked chicken breast halves - bones and skin removed, cut into 1/4 inch slices
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • 1. Bring a pot of salted water to a boil. Cook broccoli for 3 to 4 minutes until just tender. Drain and rinse with cold water. Transfer to a 9x13 inch baking dish.
  • In a saucepan, melt butter over medium heat. Add flour and whisk constantly for about 3 minutes until the flour turns pale beige. Stir in sherry, chicken broth, and heavy cream until smooth. Bring to a boil over medium-high heat, then simmer on medium-low for 5 minutes. Season with salt and pepper as desired.
  • Drizzle half of the velvety cream sauce over the vibrant broccoli and layer with succulent chicken slices. Blend in Parmesan cheese to the leftover sauce and generously coat the chicken slices. For extra decadence, sprinkle the top with more cheese, if desired.
  • Bake in a hot oven for 20 minutes or until warmed through, then broil briefly until top is golden brown.
