Kentucky-style milk gravy with bacon grease served over biscuits, bacon, and eggs for a hearty breakfast.
Ingredients:
  • 0.25 cup bacon drippings
  • 0.25 cup all-purpose flour
  • 1 teaspoon salt, or to taste
  • 1 teaspoon ground black pepper, or to taste
  • 4 cups milk
Instructions:
  • In a skillet, warm the bacon drippings over medium heat until sizzling. Whisk in the flour until the mixture is silky. Lower the heat and stir continuously to achieve a rich caramel color for the roux, approximately 15 minutes. Blend in the salt and black pepper to enhance the flavors.
  • Gradually pour in 1/2 cup of milk at a time, whisking thoroughly after each addition. Simmer the gravy, whisking constantly until thick, smooth, and bubbling.
