Old-Fashioned Lemon Pudding

Homemade tangy lemon pudding topped with fresh berries or cream for a refreshing dessert in minutes.
Ingredients:
  • 2 cups white sugar
  • 0.66666668653488 cup cornstarch
  • 5 cups water
  • 0.66666668653488 cup lemon juice
  • 0.25 cup butter
Instructions:
  • In the top of a double boiler over simmering water, blend sugar, cornstarch, and salt until smooth. Gradually whisk in 5 cups of water. Cook, stirring regularly until the mixture thickens to a creamy gravy consistency, about 5 to 7 minutes. Remove from heat.
  • Beat eggs until fluffy, then slowly add 1 cup of sugar, whisking vigorously. Combine with remaining sugar mix. Cook in double boiler, whisking constantly till thickened to pudding consistency (6-8 mins). Gradually stir in lemon juice and butter. Chill in fridge for 30 mins to 1 hour.
