Indulge in a delectable lemon pudding pie with zesty flavors. Creamy lemon filling poured into a flaky pie crust, topped with fluffy meringue, and baked to perfection.
Ingredients:
  • 1 (9 inch) pie crust, baked
  • 5 tablespoons cornstarch
  • 1 cup white sugar
  • 0.25 teaspoon salt
  • 3 egg yolks
  • 2 tablespoons butter
  • 5 tablespoons lemon juice
  • 2 teaspoons lemon zest
  • 3 egg whites
  • 6 tablespoons white sugar
Instructions:
  • Heat the oven to 350°F (175°C).
  • For the lemon filling: Combine cornstarch, sugar, salt, and water in a double boiler. Cook until thickened, stirring frequently. Remove from heat.
  • In a medium bowl, vigorously beat the egg yolks. Gradually whisk in 1/2 cup of cornstarch mixture, ensuring a smooth blend.
  • Whisk the egg yolk mixture into the cornstarch mixture in the double boiler, then cook over heat for an additional 2 minutes while stirring constantly. Remove from heat.
  • Combine butter or margarine, lemon juice, and lemon zest into the thickened mixture. Let it cool before pouring it into the pie shell.
  • In a spacious metal or glass bowl, whisk egg whites until frothy. Gradually add 6 tablespoons of sugar while beating until the mixture forms stiff peaks. Spread the meringue evenly over the lemon filling in the pie crust.
  • Place in a hot oven for 15 minutes until the meringue turns a beautiful golden brown. Allow to cool in the refrigerator before serving.
