Deliciously spiced persimmon cookies featuring cloves, walnuts, nutmeg, cinnamon, and fresh Hachiya persimmon pulp.
Ingredients:
  • 0.5 cup shortening
  • 1 cup white sugar
  • 1 egg
  • 2 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 1 cup raisins
  • 1 cup chopped walnuts
  • 1 cup persimmon pulp
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine the shortening and sugar until creamy, then mix in the egg and vanilla until well combined.
  • Combine the flour, baking soda, baking powder, 1/4 teaspoon salt, cloves, cinnamon, and nutmeg, then mix into the creamed sugar mixture.
  • Combine the raisins, chopped nuts, salt, and persimmon pulp, stirring until well mixed.
  • Spoon teaspoonfuls of the mixture onto a greased or parchment-lined cookie sheet. Bake for 12 to 15 minutes, then let them cool on wire racks.
